  • a handful or more of goji berries


To prepare:

  1. soak the snow mushroom in water, for a couple hours or overnight, remove the tough center ‘root’ and chop into bite size pieces

  2. add to pot or pressure cooker with all ingredients and cover with water

  3. stovetop: boil for 30-40 minutes, pressure cooker: soup setting

  4. add rock sugar or honey if desired, the dates and goji berries provide natural sweetness so you don’t really need this step
